Lauren Ditchley was an essential part of our sangha from 2019 until her death in 2022. She was a mother, an artist, a teacher, a Practice Leader, and a true Bodhisattva, a living embodiment of Great Friendship and Great Compassion. I think everyone who knew her felt that she was their best friend. We all miss her delightful laugh and warmth. She took great care of all of us through food and art. If you have ever enjoyed chai at one of our practices or written a haiku at our retreats, you can thank Lauren.

Lauren guides us below through how to make her famous kale salad, a dish she often made that delighted so many people in her life, including people who at our retreats and other events. It pairs really well with our New Year red lentils (masoor dal). These are scans of a recipe card that was made by one of Lauren’s Ladies of Leisure (LoL) friends for her Celebration of Life in 2022. The words are Lauren’s. Thank you to whomever made the card and helping us all to continue to enjoy it. We hope that it brings you and yours health, nourishment, and delight in abundance!
